  1. Limpiar las pechugas de pato y quitarles la mitad de la grasa. Hacerles unas marcas con el cuchillo, en la grasa, salpimentar al gusto.
  2. En una sartén sin aceite dorar las pechugas por los dos lados , tienen que quedar poco hechas por dentro. Cuando estén medio asadas retirarles la grasa y dejarlas en la sartén, procurando que no se queme la grasa. Retirar las pechugas y reservarlas.
  3. En esa misma sartén, y a fuego lento, añadir una cucharada de azucar hasta que quede a punto de caramelo. Agregar la crema de vinagre y dejar reducir todo lo posible.
  4. Añadir 1/2 vaso de jerez 1/4 de vino rancio y 1/4 de vino tinto. Dejarlo reducir a una cuarta parte.
  5. Agregar un vaso de fondo de caldo y reducir 10 minutos a fuego lento. Ligar la salsa con unos 25 gramos de mantequilla.

  7. Lavar y pelar la manzana, la naranja, el mango, la pera , el kiwi y la piña. Cortar las frutas en gajos.
  8. En una sartén antiadherente, poner una base de azucar, encima la naranja, la manzana, la pera, el kiwi , el mango y la piña . Espolvorear con azucar y añadir una cucharada de mantequilla.
  9. Poner el fuego al mínimo y tapar la sartén. Retirar las frutas a medida que estén cocidas unos 5 minutos. Primero retirar la naranja, el kiwi, el mango , la pera, la manzana y la piña.
  10. En otra sartén antiadherente poner una base de azucar y encima las frambuesas, los arandanos. Espolvorear con azucar añadir una cucharada de mantequilla. poner el fuego al mínimo tapar y dejar un par de minutos.
  11. Laminar las pechugas de pato a lo largo.
  12. Montar el plato intercalando las láminas de pato con las frutas confitadas, poniendolo en capas.
  13. Calentar en el horno a 180º 1 ó 2 minutos y ponerles salsa por encima. Servir caliente.
