En casa de la abuela eran muy típicos los pistos , que se hacían a lo grande y de conservaban en tarros en siempre iba repartiendo por las casas de sus hijos . La verdad es que me encantaba comer un huevo frito con pisto en casa de la abuela . Este gustazo nos lo seguimos dando ... como no ... pero ya sabéis ... nunca nada sabe igual que lo cocinas las mamás y las abuelas .
Os paso esta receta súper fácil y provechosa , con la que además os aporto un par de opciones más ... de cuando he querido preparar un pisto diferente para añadirlo a otros platos y que también me da un sabor particular y muy rico al plato .

- En una sartén amplia, añadiremos la cebolla Y los pimientos con un par de cucharas de aove y una pizca de sal

- Incluimos el calabacín así la pimienta, el comino y si queréis, el jengibre. Probemos de sal y dejaos cocinar otros 7- 8 minutos
- Rallaremos los tomates y añadimos al sofrito, dorando todo junto otros 5 minutos junto a la cucharada de azúcar
- Añadir ahora el tomate frito, la albahaca y si queréis, el jengibre y la Soja. Importante que vayáis probando y rectificando de especias

- Con el fuego flojito, dejaremos cocinar todo junto durante otros 10 - 12 minutos procurando que la berenjena y el resto de hortalizas queden blanditas y listo !!
- Lo podéis congelar tranquilamente si os sobra.
