Para intentar escurrir el máximo de agua, puedes poner algo que ejerza presión sobre las berenjenas, como por ejemplo un recipiente con agua.


- Mientras las berenjenas "sudan", corta en daditos la Mozzarella y resérvala.


- Pasados los 10min. pon a calentar aceite en una olla o en una sartén grande (preferiblemente en una olla, irás bastante más rápido). Cuando el aceite esté bien caliente, pasa por harina cada una de las láminas de berenjena e introdúcelas en la olla. Fríelas hasta que estén doradas.


- Cuando todas las láminas de berenjena estén fritas, unta la base de la bandeja de hornear con la salsa de tomate.

- Acto seguido, pon una capa de berenjena, otra de Mozzarella y queso parmesano, y finalmente una de salsa de tomate. Repite este proceso, hasta que tengas las capas deseadas. Finaliza con una capa de queso parmesano rallado.



- Una vez tengas todas las capas listas, introduce la bandeja en el horno a 180°C que habrás precalentado previamente. Hornea durante 25-30min.
